How to test iOs apps?

I know this really depends on what I want to get out of testing, but currently I want to focus on the exploratory method:

1. Is it best to invest in having beta tester explore, or to just dogfood the app with my team and record my own findings?

2. What’s the best tool to monitor these findings?
