How to interface a REST service in Laravel in a testable way

I'm evaluating the possibility of a tiered architecture using Laravel for the website and Lumen for the API level. Any points in favor or against this?

I'm looking for examples of this, mostly interested in what's the best (easy development and testing) way to map models in Laravel to a REST service. No luck up to now, only examples of Laravel providing REST services are easy to find. Are you aware of any examples online?
